This stuff can be complicated, so we will try our best to speak in clear English.
What are tips? These are cash tips left by a customer. Cash tips are managed in the bar by the management team. This includes who gets what, how and when.
What is tronc? It's a word to describe the way a company manages (known as a tronc scheme) digital tips from cards on the tills and bookings. Essentially, any time tip money is sent to Wonderkid Pubs' bank account, it then needs to get sent to people.
What is a tronc master? An employee representative who can change the tronc scheme. It is Elsie Boot, and you can contact her on 07999 504219.
No tips are pooled or allocated to anyone outside of the bar where the tip was received
100% of all tips received through cash, tronc or service charge go to people in the bar at the location where they were taken. Cash tips do not form part of the tronc and are kept by the team member they are given to; they may decide to pool cash tips on a shift-by-shift basis
No administration charge is taken from cash, tronc or service charge by the company
It is each person's responsibility to declare any cash tips received to HMRC. Tronc and service charge payments will be subject to any Income Tax you are liable for. More info on GOV.UK
Distribution: All site-level roles are eligible for tronc, excluding general managers. The total gratuity received is divided by the number of hours worked across eligible roles and distributed evenly based on hours worked.
Example:
Across a 2-week pay period, £100 is received into the tronc
Across the same 2 weeks, 400 hours in total were worked by eligible team members
Gratuity per hour worked is calculated as £0.25
John worked 40 hours in the pay period
John's share of the tronc is £0.25 x 40 hours = £10.00
Payment of tronc: Tips are paid fortnightly in arrears via payroll, with amounts stated on pay slips.
Transparency: You can request a report on what tronc was received and how it has been distributed. It will have all sensitive individual data removed to make sure we comply with GDPR.
Bookings may have a 12.5% service charge. This is an optional charge and the customer can request that it be removed. Any service charge will be added to the Tronc Scheme (details above).
If a booking requests that the service charge is refunded, the funds will be removed from the Tronc Scheme
If a booking cancels, the service charge is refunded to the customer
If a booking does not meet its minimum spend, the remainder of the spend must be cashed off as miscellaneous income, NOT allocated to service charge
There are various ways to claim expenses. If you have a company credit card, you must use it for business purposes only. You will need to upload receipts and information onto our expense system. Please submit 1 claim per month, on the last Friday of the month. The same goes for any other expenses paid with your own cash, petty cash or debit/credit cards.
Petty cash spending on site can be authorised by a manager, and receipts must be left in the till the cash was taken from. Please make sure you keep a receipt, as funds cannot be reimbursed without one.
If you need to travel for work, your manager will book your travel for you. This is so you are not out of pocket; it's our way of keeping your cash in your pocket. We do expect you to be sensible, book standard class tickets (if cheaper) and plan ahead.
We are a new business and it is our plan to grow, so there may be opportunities to relocate to a different pub. The difference between a relocation and a transfer is all about who wanted the change.
Relocation: If you have been approached about, or applied for, a job in a different location, you may be eligible for a relocation bonus. This means we will pay a discretionary bonus. There must be a business reason for us to pay towards your relocation, meaning:
You're the right person for the job
We can't find the talent in that location
You're doing us a solid temporarily
You are genuinely relocating, not moving down the street (it must be a new town or city)
Transfer: The other option is that you want to transfer to another bar. If there is a role available, you can let the manager know you want to transfer to their site. They will discuss the job and review your skills. Things to be aware of:
There needs to be a job opening to make a transfer work
It's not an automatic yes. Bars are different and take different sales, which can change the job and the skills required. You may be denied a transfer if your skills don't match the vacancy; this will be discussed with you in detail
We won't move a problem. If you are under-performing or we have concerns about your attitude or behaviour, we may deny your transfer. Again, this will be discussed with you in detail
